Pumpkin Bread

I have been working on this recipe, trying to get it just right. I may tweak it some more in the future but what
I have here works. It goes great with a cup of apple cider, chilled or warm.


4 cups flour
2 tsp. soda
1 1/2 tsp. salt
2 tsp. cinnamon
1 tsp. nutmeg
1/8 tsp. mace
1 Tbs. baking powder
3 c. sugar (up to half of the sugar can be brown
sugar)
1/2 cup oil
4 eggs
2/3 cup water
2 cups pumpkin (canned or fresh)
1 cup nuts (optional)

Mix dry ingredients. 
Mix liquids. 
Add liquids to dry ingredients and beat 3-4 minutes until well blended. 
Add nuts. 
Pour into sprayed loaf pans and bake at 350 degrees until a toothpick inserted in the center comes out clean. Baking time varies according to the size of pan used. In my pans, it takes anywhere from 55 minutes to 1 hour, 20 minutes. I do not use the smallest loaf pans; if you do, you might start checking for doneness at 40 minutes.
