Pumpkin Bread

Mix Dry:

1 2/3 cup plus 2 Tablespoons white all-purpose flour
1 2/3 cup whole wheat flour
1 1/2 cup white sugar
1 teaspoon salt
1 1/2 teaspoons cinnamon
1 1/2 teaspoons ground cloves
1 1/2 teaspoons nutmeg

Mix in Separate Bowl:

1 cup water:
Dissolve in 1/2 teaspoon baking powder & 2 teaspoons baking soda

add:

3 extra large eggs
1 cup vegetable oil
1 1/2 cups brown sugar

With Mixer running, add wet ingredients to dry.

Add 2 cups pumpkin
Add 1 cup raisins & 1 cup chopped nuts

Pour into three 8.5" x 4.5" well greased and floured bread pans.

Bake at 350 degrees for 1 hour or until toothpick comes out clean.

Putting a cookie sheet on the rack below the bread pans helps prevent bottoms of loaves from overcooking.

(I do not use raisins, rather additional chunky walnuts).
