Pumpkin Butter
Diana Faust

Another use for all that pumpkin you've grown, and easier to make than apple butter.

4 cups pumpkin
3 1/2 cups sugar
1 1/2 cups honey
1 1/2 tsp. cinnamon
1/4 tsp. allspice
1/4 tsp. salt
1/4 tsp. mace or nutmeg

Combine all ingredients in a large saucepan, simmer uncovered 30 minutes, or until the thickness you like.  Cool.  Pour into small containers with lids and freeze until ready to use.
