Shoo-fly Pie (2 versions)
Elsie Faust

Pastry for 2 one-crust pies
3 cups presifted flour
1 cup molasses
1cup brown sugar
1 1/2 cups hot water
1 teaspoon baking powder
1 teaspoon baking soda
1/2 cup shortening

Preheat oven to 350 deg. F. Line two 8-inch pie plates with pastry. Blend molasses, water, and baking soda. In mixing bowl combine flour, sugar, and baking powder. Cut in shortening until mixture resembles coarse crumbs.
Arrange alternate layers of crumb mixture and molasses mixture in pastry-lined plates. Bake in preheated oven for
30 t0 40 minutes or until browned. Makes two 8-inch pies.

 

Here is another version which Elsie's sister uses.

Shoe-fly pie (Crumbs)
1/4 cup shortening or a little more.
1 1/2 cups flour
1 cup brown sugar- mixed together

1 cup molasses
1 egg
3/4 cup hot water
3/4 teaspoon baking soda (dissolved)

Bake 15 minutes at 400 deg. F., then 30 minutes at 350.
