Coat slices of eggplant with melted margarine or eggbeaters and
then dip in Keeblers cracker
crumbs. Bake/broil the slices.
Beats the frying in oil and soaking up oil that we always did with eggplant. I do the same
thing with
neck-pumpkin slices.
