Ingredients:
4 cups all-purpose flour
1 teaspoon salt
2 teaspoons baking powder
2 teaspoons baking soda
2 teaspoons cinnamon
1 stick margarine
1 1/2 cups vegetable shortening
2 cups sugar
2 cups pumpkin
2 teaspoons vanilla
2 eggs
Sift dry ingredients and set aside. Cream margarine, shortening and sugar. Add eggs and
pumpkin.
Thoroughly combine with sifted dry ingredients. Add vanilla.
1 cup of dates, nuts or raisins may be added. Chill thoroughly. Drop by teaspoons on
greased
cookie sheet. Bake at 350 degrees for 12 minutes. Cool and frost with caramel frosting.
Caramel Frosting
6 Tablespoons margarine
1/2 cup milk
1 cup brown sugar.
Stir and bring ingredients to boil. Add 2 1/2 cup of powdered sugar. Remove from heat and
beat
(with mixer) until thick.
These cookies are soft and the frosting is delicious. The frosting may harden if not
spread
immediately. I do not add any nuts, dates or raisins.
